If you want to use Group Policy Folder Redirection for (my) DOCUMENTS or (my) DESKTOP:
you can but it has to be to on an SMB share. Let me explain.
You can access a client PC from a Terminal Server using either:
BUT Folder Redirection is ONLY supported to the second of those options, an SMB SHARE. You cannot set your Group Policy Folder Redirection to:

Note that I confirmed with Microsoft Partner support that you CAN use both User Profile Disks AND GP Folder Redirection at the same time. (Thank you Steven at Microsoft)

I've been trying to set up as your post but not getting too much luck.
Did you manage to get your desktop and documents to the local user profile on the local machine?
What type of settings you set on folder redirection?

I have just shut down my last Server 2012 RDS server and have created Server 2016 RDS boxes, but I did not use any of this folder redirection.
